'Nirvana' is reached when that fatty fish is grilled over a very hot fire to no more than 'medium-rare.' The grill imparts a very desirable crisp texture to the outside of the Salmon - it also sears the Salmon preserving it's juices and flavors. Yet, its the smoke which accentuates the rich fruit core of the wine - the two elements are so complimentary, while each allows the other to shine.
